Yes, it’s worthwhile replacing the collar as well. Otherwise, the knob itself sits up slightly too high.

Stainless steel? I don't think I've seen an OEM one of those before. 

I have the aluminum knob from Elise-shop on mine. I like the heft vs the leather OE one, and it came with everything necessary for the swap.

I've currently got the egg shaped leather one but would like to swap for a round metal one.

You missed out the 'it feels better and sits higher'.

How much higher does it sit? I'd personally would like a slightly higher hand position when changing gear.
